ALGIERS- Sardines with the dersa (sardines bel dersa) a typical Algerian dish very simple to prepare…. Algerians call dersa the mixture of spices which is purée using a mortar {Algerian term is Mahraze}.

Dersa is made with garlic, salt, pepper, paprika, and cumin. You can add red pepper. In some regions ras el hanout is added.

In summer, Algerians opt for this dish and serve it with fries and salad.

Ingredients
Sardines
Garlic cloves according to everyone’s taste
1 tsp of paprika
1 tsp of cumin
Salt
Pepper
Flour or semolina
Frying oil

Instructions
Clean, scale, empty the sardines, and remove the head. Rinse them well.
Prepare the dersa by mashing the garlic, salt, pepper, cumin and paprika with a mortar.
In a salad bowl, coat the sardines with this preparation, rubbing them well with the dersa and inside the sardines’ cavity that have been emptied.
Heat the frying oil in a pan. Roll each sardine in flour or semolina.
Fry the sardines on both sides in groups of 2 or 3, sticking them by the tail.
Serve immediately drizzled with a dash of vinegar or lemon.
