ALGIERS- H’miss (hmiss, hmis) is an Algerian dish widely prepared in Algeria, with minor differences from one region to another. It’s a very simple, healthy, and above all a tasty starter. It’s made of pepper (hot, sweet, or both), as well as tomatoes, olive oil, and salt. Pairing hmiss with Algerian crispy flat bread works beautifully. The sweetness of the roasted peppers with the tomatoes is a great flavor.

Ingredients:

4 bell/ red peppers

2 tomatoes

4 cloves of garlic

Salt

Pepper

Olive oil

* Flat bread

Instructions:

Turn on the stove and place the peppers directly on the fire, until all the skin is burned.

Peel the skin from the bell peppers with a spoon or your hands. Rinse the peeled peppers with water to make sure all the burned skin is gone. Next, cut the bell peppers into small cubes.

In a skillet, heat olive oil and sauté tomatoes. Add garlic, peppers and salt. Serve the felfel with flat bread.
